Mix in 750g of tomatoes with 6 cloves garlic, halved onion and one medium sweet potato with olive oil, and salt
Bake for 30 mins and finely purée it
If the soup is too thick add some veggie stock or water
Add in oregano, black pepper, chilli flakes and chopped basil and serve with a hearty bread
