Three Mushroom Soup

Ingredients

  • 350 grams Majestic Mixed pack Mushroom
  • 1 medium onion, chopped
  • 4 garlic cloves, finely chopped
  • 1 tablespoon all purpose flour
  • 3 cups vegetable stock
  • Salt and pepper to taste
  • Oil
  • Cream, optional

 

Method

  • In a pan, add a tablespoon of oil and sauté the mushrooms in batches until lightly browned. Set aside the mushrooms.
  • In the same pan over medium heat, add a little oil if needed then add the onions and cook until light and translucent.
  • Add the garlic and cook until fragrant, this will take less than a minute.
  • Add the sautéed mushrooms and season with salt and pepper.
  • Stir in the all purpose flour for 2-3 minutes to cook off the raw flour taste.
  • Add the vegetable stock and stir and bring the mixture to a boil.
  • Once boiled, reduce the heat and allow the soup to simmer for 10 minutes.
  • Once done, remove from heat and blend the soup. If using an immersion blender, blend immediately. If using a jug blender, cool a little before blending.
  • Transfer the soup to the pan and taste for seasoning and adjust accordingly.
  • Finish off with a touch of cream.
